This week, I’m sharing some Irish-inspired recipes—from cozy classics to simple dishes that bring a little luck of the Irish to your table. Plan ahead and get ready to enjoy these delicious recipes. Irish-inspired RecipesThis year, I’m keeping things simple but flavorful with a lineup of classic Irish-style dishes—each with a delicious twist. Instant Pot beef stew: For something rich and satisfying, here's a beef stew that delivers deep, deep, savory flavor in a fraction of the time, packed with tender chunks of beef, hearty vegetables, and fragrant herbs in a deeply flavorful gravy. No Instant Pot? Make it stovetop, it just takes longer. Cauliflower Colcannon with Kale: While many people associate colcannon with cabbage, kale was actually the traditional choice before cabbage became more common. This version keeps things lighter and lower in carbs by using cauliflower purée while still delivering that creamy, comforting texture. If you prefer a classic take, pair the kale with mashed potatoes—my riced mashed potatoes recipe works perfectly. Irish soda bread: There's no kneading, no fuss, just hearty homemade goodness and a simple recipe, plus it's gluten-free! I use currants, but you can use raisins if no currants are available. Braised cabbage with bacon: This traditional Irish family dish makes a terrific side dish for roast chicken breasts, pork chops, or corned beef. I love leftovers warmed up and topped with poached or scrambled eggs for breakfast. Need a Meatless Option?I'm including my vegetarian shepherd’s pie for a St. Patrick's Day meatless option, filled with hearty beans instead of ground lamb, plus vegetables, then topped with creamy mashed potatoes.
